What I Eat In A Day: Low Carb High Fat

Hello to my beautiful followers,

One of my long standing followers asked for me to share what I’ve been eating in a day while on low carb, high fat. To be honest its been such a learning curve! I didn’t realise so many things had carbs in it. I started my low carb journey about 3 months ago with the help of Vicky Kuriel’s 6 week low carb challenge.

In the first 6 weeks I lost just under 3 kilos. I probably could have lost more weight if I followed the guide more closely and had scales. Anyway post the 6 week challenge and I’m still adopting a low carb lifestyle. I’ve been regularly sharing my learnings and meals on Instagram Stories (I also have it saved under highlights- Low Carb) but here’s a recap for easy reference.

Breakfast

From Monday to Friday, I fast and don’t have breakfast. If you want a separate post about intermittent fasting please let me know.

On the weekends I tend to have a late brekkie with Ben. Below are my go to low carb brekkies.

Bacon and 2 scrambled eggs (excluding tomatoes and cheese). Approx 457 calories and 3 grams of carbs.

Recipe: Cauliflower Fried Rice

Hello beautiful people,

With the weather getting cooler, we tend to want to eat more comfort food which usually are unhealthy. But I’ve recently discovered cauliflower rice and its so delicious! So you get the best of both worlds, comfort food but not fattening. Here’s my easy Cauliflower Fried Rice recipe that you can mix up with whatever left overs you have and you can also add meat.

What you need:

  • Coles or Woolworths Cauliflower Rice
  • Green Beans
  • Corn
  • Carrot
  • Oil
  • Soy sauce
  • Garlic
  • Egg- optional
  • Tofu- optional

Recipe: Tabouleh, Cous Cous and Lentil Salad

Hello beautiful people,

Fun fact, I used to hate Tabouleh because I had a traumatic experience when I was younger when my Aunty who was a terrible cook made it for me. Lets just say it was not pleasant. For years I could then only eat Tabolueh with curly leaf parsley which is totes not normal, but I was honestly so scared that I couldn’t eat flat leaf parsley. Anyway fast forward and now I’m obsesses with Tabouleh and all variations. Today I share my ‘beefed’ up version featuring Lentils!

What you need:

  • 2 bunches of flat leaf parsley
  • Packet of cherry tomatoes
  • 1 brown onion
  • 1-2 garlic cloves
  • 1 can green lentils
  • Cous cous
  • Olive oil
  • Lemon juice
  • Salt and pepper
