Hello to my beautiful followers,
One of my long standing followers asked for me to share what I’ve been eating in a day while on low carb, high fat. To be honest its been such a learning curve! I didn’t realise so many things had carbs in it. I started my low carb journey about 3 months ago with the help of Vicky Kuriel’s 6 week low carb challenge.
In the first 6 weeks I lost just under 3 kilos. I probably could have lost more weight if I followed the guide more closely and had scales. Anyway post the 6 week challenge and I’m still adopting a low carb lifestyle. I’ve been regularly sharing my learnings and meals on Instagram Stories (I also have it saved under highlights- Low Carb) but here’s a recap for easy reference.
Breakfast
From Monday to Friday, I fast and don’t have breakfast. If you want a separate post about intermittent fasting please let me know.
On the weekends I tend to have a late brekkie with Ben. Below are my go to low carb brekkies.
Bacon and 2 scrambled eggs (excluding tomatoes and cheese). Approx 457 calories and 3 grams of carbs.
Cream cheese pancakes with sugar free maple syrup. Approx 402 calories and 3 grams of carbs. If you include any berries it will automatically increase the carb intake- but sometimes you just need to live a little.
Lunch
Spinach, half a cucumber, half a small avocado, fetta cheese, chicken breast and sometimes a bit of olive oil as seasoning. Approximately 259 calories and 12 grams of carbs.
To be honest, I just chuck in whatever left overs I have. Protein is key, whether its chicken breast, left over mince, boiled eggs or fish. For fat I always have avocados and Fetta on hand. And the sneaky carbs to watch out for is in tomatoes and even in avocados- which still have quite a few carbs so don’t get carried away.
Dinner
Sirloin Steak (approx 200 grams), steamed broccoli and butter. Approx 497 calories and only 6 grams of carbs.
Creamy prawn “pasta” using Slendier. Approx 442 calories and 6 grams of carbs.
